I saw this dessert recipe on a cooking show on PBS about a year or two ago and it's delicious! The berries make it a great addition to a Fourth of July celebration! It tastes light and fresh, yet very flavorful! It's so easy to make. We love it so much I thought I'd share it with ya'll!
Note: You can use any variety of berries you like...we like the strawberries and blueberries, especially for the 4th of July
1 Pound Cake (like you buy in the frozen food section at your grocery store)
1 Carton of Strawberries, chopped in halves or quarters
1 Carton of Blueberries
A few Raspberries
Knock-off Custard--Combine 1 Box of Vanilla Instant Pudding Mix with 1 Cup Milk and 1 Cup Cool Whip. Stir until well blended.
1.) Carefully slice Pound Cake into 3 layers.
2.) Combine chopped Strawberries and Blueberries in a bowl and set aside.
3.) Put bottom layer of Pound Cake on a pan, (I use the pan the Pound Cake came in).
4.) Spread 1/3 of the Knock-off Custard on top of the layer of Pound Cake.
5.) Layer 1/3 of the berries on top of Custard.
6.) Repeat with the remaining 2 layers of Pound Cake.
7.) I like to add a few Blackberries or Raspberries on the top layer.
8.) Cover with foil and store in the fridge.
